There is a reason hand pounding has survived for thousands of years. When grain is pounded by hand, the outer bran layer is removed gently, without the heat and pressure of industrial milling that strips away natural oils, vitamins, and flavour. What you get from hand-pounded kodo millet is a grain with its nutritional integrity intact. Known as Kodra in Hindi and Varagu in Tamil, kodo millet has a naturally low glycemic index, is high in fibre, and is one of the better plant-based sources of magnesium and B vitamins. Ours is grown organically without pesticides and hand pounded using traditional methods that preserve the grain's natural character. It cooks like rice, absorbs flavours beautifully, and works for everyday meals as a white rice replacement, in khichdi, or in pongal.
